Slow Cooker ChickenSlow Cooker Chicken
There is nothing like coming home from a long day of work and school and smelling the wonderful aroma of dinner when you open the door. As one KY mother says, “I feel like I have a personal chef when I come home to a hot dinner, even if I am the one who started it in the morning.”
1 2-3 pound whole chicken
Salt and pepper to taste
Rinse the chicken under cold running water and pat dry. Rub with a little vegetable oil and sprinkle with salt and pepper.
Wad three pieces of foil into 3-4 inch balls and place them in a bottom of the slow cooker.
Place the chicken on top of the aluminum foil. Set the slow cooker to High for 1 hour, then turn down to Low for 6-9 hours or until the chicken is no longer pink and the juices run clear. Transfer to a cutting board and pull chicken apart into pieces. It will be so tender that it should pull apart easily.
Sere with rice and a green salad.
