Quesadillas...Your Way
Simply fill these with cheese for a quick snack or with vegetables and meat for a meal
Whole wheat tortillas (or white if ww is too much for your family at this point)

Choose any of these that you like:
  • Cooked chicken, cut in small pieces
  • Drained canned black beans
  • Grated low fat cheese
  • Chopped green onions
  • Mild pepper rings
  • Chopped tomato
  • Serve with:
  • Salsa
  • Low fat sour cream
Spread tortilla out flat on a plate or cutting board.  Sprinkle the fillings on half of the tortilla. Fold in half.  Place in a lightly oiled skillet on  medium heat.  Heat for about 2 minutes or until brown on one side.  Use a spatula to flip quesadilla over and cook on other side.  Can also use a George Forman grill and then no flipping is needed. Cut into wedges with a sharp knife or pizza cutter and serve immediately with salsa and low fat sour cream.

If you want to make a lot at one time, brush the tops and bottoms of the quesadillas once they have been assembled with a small amount of oil. Place folded quesadillas on a cookie sheet and bake at 450˚ 8-10 minutes on each side.  Cool on a wire rack a few minutes before slicing into smaller triangles.

If you like, have children assemble their own quesadilla. These are good cold and can be packed in lunches.  For a dinner, serve with sliced cucumbers and vinegar and sliced apples.
*For chicken, make a few extra pieces of chicken for dinner a night or two before.  Or if time is tighter than money, buy pre-cooked chicken strips.
