- 1 pound new potatoes sliced into ¼” circles
- 1 onion sliced thinly
- 4- 8 chicken thighs
- ½ cup lemon juice (can used fresh or bottled)
- 2 teaspoons oregano
- salt and pepper
Layer
sliced potatoes in bottom of a lightly oiled 13” x 9” pan. Spread
onions on top. Sprinkle with salt and pepper. Place chicken thighs on
top. Pour on lemon juice. Sprinkle with more salt and pepper and top
with oregano. Cover dish with foil and bake at 375 for a bout 40
minutes. Remove foil and bake another 20 minutes or until chicken is
cooked through. Yum!
