15 Minute Black Bean Salad
  • 1 15 oz can black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 12 cherry tomatoes, quartered
  • 1 small minced onion
  • 2 medium cloves garlic, pressed
  • diced green, red or yellow pepper
  • 1 cup chopped crisp lettuce
  • 2 Tablespoons olive oil
  • 3 Tablespoons lemon juice
  • Salt and pepper
Toss all ingredients. Serve with baked tortilla chips.
